It is March 22nd and we are in the middle of a snow storm! It doesn't feel much like Spring to me at all! The first day of Spring was March 20th and although I have enough sense to not expect that it will instantly turn to Spring it would be nice to see the snow storms and freezing rain come to an end. I do enjoy it being lighter later and have noticed the birds singing early in the morning. The sun feels warmer and the sap is starting to run as well. So even amongst what feels like an unending Winter there are signs of hope that change is coming and new growth will start to thrive with the warmer temperatures that will soon be here!
One of the more exciting signs of Spring for my family on the farm was when the sap started to run. It was always a lot of work but it was great family time. Sometimes my Dad would have to put in an all nighter to keep an eye on the boil and it would be nice to hang out with him in the shack on those late hours and have some one on one time. I now live three hours away and it's impossible to be there to help. But if I could I'd be there in a heartbeat! There was always lots of comrodary during the gather and playful arguing about who would get to drive the truck. But the greatest reward was getting to taste the syrup. Wow! Fresh right off the boil, nothing in the world like it, absolutely delicious and amazing! When you have that liquid gold in your hands, Spring has definitely arrived!
